Cross contamination, how to prevent it?
The first step in maintaining a healthy quality of life is: take care of the food we eat. In that sense it is important to know how they can contaminate food to take the necessary preventive measures.
Cross contamination occurs when harmful microorganisms (bacteria) are transferred to healthy foods. That is, through raw foods, hands, lack of hygiene equipment or utensils can get bacteria to food safe.
Cross contamination can occur in two ways: direct and indirect.
The straight occurs when a contaminated food enters into direct contact with a healthy one. Can occur when cooked food is mixed with raw. For example, in salads, cold dishes, cakes and cream, etc. When there is a poor location of food in the fridge also no risk of direct contamination.
Indirect pollution is produced by the transfer of contaminants from one food to another via hands, utensils, equipment, counters, cutting boards.
Occurs when, for example, with a knife cut a raw chicken and with the same knife (which was not washed) log a chicken is cooked. In this case, the bacteria were in the raw chicken, cooked and pass to pollute.
Some tips to avoid cross contamination and health and care of your family:
- Place the food ready to eat two at the top of the refrigerator.
- Raw foods should be in the bottom of the fridge. For this would prevent the juices from contaminating foods that are ready to eat.
- Cover all foods properly placed in the refrigerator.
- Use clean utensils for each food.
- Wash hands before preparing food.
