<p>70% of the diseases of Western populations are caused by &#8220;defective nutrition, as maintained by the book&#8221; Foundations of eye health micronutritional &#8220;published by the Department of Health of Valencia and the University Hospital Doctor Peset . This work aims to reduce the nutritional services, improve diet and optimize eye health.</p>
<p>A total of 38 health professionals have participated in this volume relates to the main food ocular pathologies. Over 25 chapters are studied micronutrients, especially vitamins and some minerals. The book addresses the physiology of the eye and some pathologies of this organ that are based on nutrients and food.<br />

<strong>About 70% of illnesses that affect us are caused by defective nutrition, such as hypertension, atherosclerosis, diabetes, <a href="http://www.mytabr.com/category/bone-health/osteoporosis">osteoporosis</a>, obesity, arthritis, anemia, anorexia, bulimia, caries and gingivitis,</strong> Dr. Maria Dolores detailed Pinazo, coordinator of the book and ophthalmologist Central Unit for Biomedical Research, University Hospital Doctor Peset. It is further estimated that 50% of daily medical consultations are related to the nutritional status of the person or the dietary habits of the family environment, he added. &#8220;Hence the importance of knowing all those patterns that allow us to identify alterations occur early in the nutritional status of individuals and their impact, in this case on the visual system,&#8221; he said.</p>
<p>From the viewpoint of the visual system &#8220;disorders may influence both dietary excess and defect,&#8221; the authors of the book. Among the diseases caused by insufficient intake of certain nutrients include those related to abnormalities of the availability of vitamins, especially the deficiency or lack of vitamin A or retinol and vitamin B2 or riboflavin. Vitamin A deficiency causes various ocular anterior segment procedures, such as dry eye syndrome, night blindness, conjunctival xerosis, Bitot&#8217;s spots and the xerosis irreversible severe corneal ulceration. In turn, a deficiency of vitamin B2 can cause photophobia, keratopathy and optic neuropathy, depending on the degree of impairment. Also excessive intake of nutrients is the origin of disease with severe impact on vision, such as diabetes, hypertension, dyslipidemia and obesity.</p>
<p>The book compiles the results of research conducted by the University of Malaga on animal model in which it was found the effect of virgin olive oil on the retinal vasculature in diabetic rats. The composition and properties of this oil vasculoprotective give effect not only prevents cardiovascular events, but can help control the complications of diabetes in the retina. Other aspects are analyzed as the basic groups of nutrients, diets and Eastern Mediterranean, the implications of minerals and vitamins A, B, C, D and E in the visual system, the implications for the ocular health of the daily activity , diet-risk groups, the oxidative stress, <a href="http://www.mytabr.com/tag/nutritional-supplements">supplements</a> and pathologies micronutritional like cataracts and Macular Degeneration Age.</p>
